I make soup for many weeks in the Winter. I have not tried out a new recipe for a bit. I was happy to discover this recipe in the Taste of Home Ultimate Soup book.
Mexican Shrimp Bisque
1 small onion, chopped
1 Thsp avocado oil
1 tablespoon minced garlic
1 Tbsp all-purpose flour
1 cup chicken bone broth
1/2 cup heavy cream
2 Tbsp taco seasoning
12 ounces uncooked shrimp
1/2 cup sour cream
guacamole for garnish
- In a small saucepan, saute the onion in the oil until tender. Add the garlic and cook for a minute. Stir in the flour until blended. Stir in the chicken broth, cream, and seasoning.
- Reduce the heat, cover, and simmer for 5 minutes.
- Add the shrimp to the soup. Simmer for 5 to 10 minutes until the shrimp are pink.
- Whisk in the sour cream.
- Top with guacamole.

CMT or Charcot-Marie-Tooth is the most commonly inherited peripheral neuropathy. It affects over 155,000 Americans (as many as MS). It is a disease of the nerves that control the muscles. It is slowly progressive, causing loss of normal function and or sensation in the lower legs/feet and arms/hands.
Symptoms include: muscle wasting in the lower legs and feet leading to foot drop, poor balance, and gait problems. Atrophy in the hands causes difficulty with manual dexterity.
Structural foot deformities such as high arches and hammer toes are common.
Poor tolerance for cool or cold temperatures, and many people have chronically cold hands and feet.
Additional symptoms may include fatigue, sleep apnea, breathing difficulties, and hearing loss.
