Soup Sunday- Chicken Pumpkin Ravoli Soup


I wasn't going to make soup today. I was supposed to have lunch with a friend at local Vietnamese restaurant. But the weather threw a wrench in our plans.  This is what it looked like outside my window this afternoon.


As I am writing this, it is snowing so hard and is so windy I can barely see the park across the street. It started snowing about 7 pm last night and is expected to continue until about 3 am. We've already gotten about 8 inches. So it was perfect weather to stay in and cook. It was perfect soup weather.

I used ingredients I had on hand. So feel free to improvise with what you have in your kitchen. I used pumpkin ravioli because I think it pairs nicely with the chicken broth. Any ravioli will work.

Chicke Ravioli Soup



4 cups chicken stock
1 large carrot sliced
2 stalks salary diced
½ package frozen pumpkin ravioli (about 10)
1 cup peas
2 cups mixed stir fry vegetables (peppers, snow peas, mushrooms)
1 tablespoon dried marjoram
2 sprigs fresh rosemary
Salt and pepper


Add the stock to a 5 quart Dutch oven.  Bring to a boil, add the carrots and celery.  Add the ravioli and cook until the ravioli is done. Add peas, vegetables, marjoram and rosemary.  Bring to a simmer and simmer until the vegetables are heated through.  Add salt and pepper to taste.

Serves 4

CMT or Charcot-Marie-Tooth is the most commonly inherited peripheral neuropathy. It affects over 155,000 Americans (as many as MS).  It is a disease of the nerves that control the muscles. It is slowly progressive, causing loss of normal function and or sensation in the lower legs/feet and arms/hands.

Symptoms include; muscle wasting in the lower legs and feet leading to foot drop, poor balance and gait problems Atrophy in the hands causes difficulty with manual dexterity.

Structural foot deformities such as high arches and hammer toes are common.

Poor tolerance for cool or cold temperatures and many people have chronically cold hands and feet.

Additional symptoms may include fatigue, sleep apnea, breathing difficulties and hearing loss.
