Stew Sunday- Ginger Chicken Stew

I've been changing things up the last few weeks with stews instead of soup.  This week I have an Indian inspired dish.  It is easy to make. It slowly cooked while I was doing things around the house.

I really like trying out new dishes to keep things interesting.   This one has turmeric in it.  Studies have shown that this spice may be helpful in reducing some of the symptoms of CMT.  Or you can just put it in your cooking because you like the taste.  



2 teaspoons minced garlic
1 bunch green onions sliced
2 teaspoons minced ginger root
4 ounces of fresh white mushrooms.
2 tablespoons coconut oil
2.5 chicken leg quarters (pieces total)
1 cup chicken broth
2 cans coconut milk
¼ cup cornstarch
½ can baby corn cobs
2 cups frozen stir fry vegetables
2 ounces of grape or cherry tomatoes.
1 tablespoon yellow curry powder blend or paste
2 teaspoons turmeric
Salt and pepper
Jasmine rice cooked

Place coconut oil in bottom of heavy bottom Dutch oven. Once oil is hot, add garlic, ginger, mushrooms and onion. Cook for 2 minutes, then add the chicken pieces. Cook until the chicken pieces are browned. Turn so all sides are browned.

Add chicken broth and coconut milk.  Add the curry powder mixture or paste and turmeric. Cover, turn heat to low and simmer the chicken for 45 minutes.

Mix cornstarch with just enough water to make a paste. Add to chicken mixture to thicken.

Add the corn cobs, and vegetables.  Serve over steamed Jasmine rice.

CMT or Charcot-Marie-Tooth is the most commonly inherited peripheral neuropathy. It affects over 155,000 Americans (as many as MS).  It is a disease of the nerves that control the muscles. It is slowly progressive, causing loss of normal function and or sensation in the lower legs/feet and arms/hands.

Symptoms include; muscle wasting in the lower legs and feet leading to foot drop, poor balance and gait problems Atrophy in the hands causes difficulty with manual dexterity.

Structural foot deformities such as high arches and hammer toes are common.

Poor tolerance for cool or cold temperatures and many people have chronically cold hands and feet.

Additional symptoms may include fatigue, sleep apnea, breathing difficulties and hearing loss.
