Super Food Saturday-Beet Brownies

I've written many times I am not a big fan of vegetables.  I have been eating salads every day and looking for more ways to work them into my diet.

Today's recipe has beets in the recipe. I would never eat beets on their own because I don't really like the taste.so nice chocolate brownie recipe is a perfect place to hide them.

I am not going to say this is health food, but this recipe is a bit healthier than your average brownie recipe.  The beets not only add some nutrition, but they make a really rich dense  brownie.

1/2  cup  butter ( 1 stick)
6 ounces semi-sweet chocolate chips
1/2 cup brown sugar
8 ounces cooked beets, peeled ( about 4) and pureed in a blender
1 teaspoons vanilla
2 teaspoons chocolate extract
1 cup chopped pecans
3 large eggs at room temperature
1/2 cup whole wheat flour

Heat oven to 350 F.  Coat a 9 inch cake pan with butter.
Melt the butter and chocolate in a saucepan over low heat stirring occasionally.  Remove from the heat and let the mixture cool slightly.  Add the extracts.
Add the pureed beats, sugar and flour to a bowl.   Add the chocolate mixture and mix well.    Add the eggs one at a time until well mixed.   Pour the batter into  a prepared pan.  Bake for 30 to 35 minutes.
Let the pan cool for 10 minutes, than transfer to a plate.  Dust with powdered sugar.
Serves 8

In 2017 she placed 2nd in her age group at the Winter Triathlon National Championship, earning a spot on Team USA for the World Championship.

She travels around the country raising awareness of CMT.

CMT or Charcot-Marie-Tooth is the most commonly inherited peripheral neuropathy. It affects over 155,000 Americans (as many as MS).  It is a disease of the nerves that control the muscles. It is slowly progressive, causing loss of normal function and or sensation in the lower legs/feet and arms/hands.

Symptoms include; muscle wasting in the lower legs and feet leading to foot drop, poor balance and gait problems Atrophy in the hands causes difficulty with manual dexterity.

Structural foot deformities such as high arches and hammer toes are common.

Poor tolerance for cool or cold temperatures and many people have chronically cold hands and feet.

Additional symptoms may include fatigue, sleep apnea, breathing difficulties and hearing loss.
