Super Food Saturday- Pumpkin Slow Cooker Oatmeal

It is past fall where every recipe I see seems to have pumpkin in it.  I do like to eat it all year round because it is so healthy.  Making a recipe like this helps to work more vegetables into my food. This is a tasty way to add them to breakfast.

1/2 cups steel cut oatmeal
1 can (15 ounce) pumpkin puree
1 can evaporated milk
1/2 cup chopped dates
1 tablespoon pumpkin pie spice
1 cup almond/coconut milk mix
1 cup golden raisins
1/2 cup chopped walnuts

Put the oatmeal, pumpkin, evaporated milk, dates and spices into a small slow cooker.  Put in the almond coconut milk and mix well.  Add more milk if needed to reach the top of the slow cooker.
Put on low and cook over night. Add the raisins and serve. Add more milk if the oatmeal is too thick. Top with chopped walnuts.

Serves 6
