Salad Sunday- Apple Bacon Salad

Apple Bacon Salad
















4 cups torn spinach leaves
2 cups coarsely chopped red cabbage
4 gala apples chopped
1/4 lb bacon cooked and sliced into bite sized pieces
4 hard boiled eggs chopped
1 cup grated sharp cheddar cheese
4 stalks of celery chopped
1 pint heirloom cherry tomatoes
1 bunch green onions thinly sliced

Fresh ground black pepper

Dressing
1/3 cup olive oil
3 tablespoons balsamic vinegar
1 tablespoon stone ground mustard

Mix together the apples and all of the vegetables. Top with the cheese and bacon. Mix together the dressing. Pour over the salad and toss well.  Top with freshly ground black pepper.

Super Food Saturday- Chocolate Avocado Pudding



 I have wanted to try this recipe for some time.  I think I got it from the Max Health Living site.  I love to have something sweet after I eat. I can have this and not do too much damage to my diet. Although an avocado has 350 calories, the fat is a healthy fat.  I changed up this recipe, using yogurt instead of almond milk.

Chocolate Avocado Putdding

1 ripe avocado, flesh scooped out
1 teaspoon chocolate extract
2 tablespoons stevia
6 tablespoons yogurt
1/4 cup of ice

Put all the ingredients in a blender.  Blend on high until smooth. Serve immediately.

Serves 2

Fair Friday- Home Blended Thieves Oil


This blend of essential oils is great to diffuse or even to use topically. It is a blend of a number of oils. It got it's name because the story goes that this blend protected thieves that robbed the victims of the Black Plague in Europe. They did not get sick because they were protected by the blend of essential oils.

Be sure to use good quality oils. Look for organic therapeutic grade. I buy my oils on Amazon and Ebay.

If you are going to apply topically or ingest be sure to blend with a carrier oil such as almond or coconut oil. Always check with your doctor before ingesting or using topically. Never use un-diluted

Thieves Oil Blend

85 drops of clove essential oil
40 drops of ginger essential oil
70 drops lemon essential oil
40 drops of orange essential oil
50 drops of cinnamon essential oil
40 drops of eucalyptus essential oil
35 drops of rosemary essential oil

Blend all of these and store in a dark glass bottle in a cool place away from sunlight.

To diffuse, just add a few drops of the blend with water in a diffuser.

Beer Garden 5K- Giving My Best

My season continued this week with the first race in the Beer Garden 5K series.  When Milwaukee was started the city founders decided to put park in every neighborhood. In those early days beer gardens supported by the local brewers were a feature in many parks. That ended with prohibition.

A few years ago the beer gardens were started up again. Several of the parks have beer gardens that are open all summer. Some only operate for a few weeks when the traveling beer garden trailer and food trucks arrive for a six week visit.  The race series follows these traveling beer gardens.  The event brings out the neighborhood residents to socialize, drink some beer and listen to music.  The finish line of the races is right at these sites.

The first race this season was  on May 17th in Greenfield Park on the sough side of Milwaukee. The last time I raced in Greenfield Park it was a hundred degree day in late summer. I took 3rd place in my age group.

My plan for the race was to use it as one of my running speed workouts for the week. I started a training plan last week from USA Triathlon. The plan was sent to all members of Team USA training for the ITU World Championship in Denmark in July. I will be doing the Aquathlon race.

The workout was a ladder speed workout. That meant 10 minutes of warm-up, then gradually increasing speed intervals of 2 min, 3 min 4 min and 6 minutes. I decided to do 2 minutes of rest in between.

It was a cool night with start time temp in the low 50's with a bit of wind. I warmed up and was ready for the start. The start was about 100 yards on grass which I hate. I am always afraid of the uneven ground when running on grass. It is easy to turn an ankle.

The course would be two loops. Normally that is pretty boring, but the second loop added a loop around the park pond.

The whole race went really well. I executed my race plan perfectly.  I added an extra two minute speed interval to get me to the finish line.   I pushed as much as I could. I am proud of how hard I worked.  I ended with a time of 31:04 which is about a minute slower than I was at this time last year. I am really about 10 pounds over racing weight. I am working on dropping that weight right now.

Early season races like this are great for figuring out improvements. My effort got me 4th place in my age group. I was beaten by a minutes by a runner that I competed against the last year in the Chilly Willy series.  So I have some work to do.   I also expect with the marathon training that starts in a few weeks, my times will also improve. The extra miles will bring down my 5K times.

The next race is in just a few weeks. I am hoping for a little faster time and a little better result next time.

Skillet Sunday- Beef Fajitas



I made this recipe a few weeks ago.  I added a twist by adding black beans to the recipe.


Beef  Fajitas













1 lb sirloin steak sliced in long thin strips about  3 inches long
2 tablespoons grape seed oil
1/2 green and bell pepper sliced in long strips, 1/4 inch wide
1/2 white onion, cut into long strips
1/2 of 15 ounce can of black beans rinsed
2 tablespoon commercial fajita seasoning
prepared salsa
guacamole
whole wheat flour or corn tortillas

Heat a cast iron skillet on medium heat. Add the oil.  Add the onions and meat and cook until the beef is no longer pin and the onions are soft.  Add the peppers and cook for a few minutes. They should be tender crisp. Add the beans and the seasoning.    Serve on warm tortillas topped with salsa and guacamole.

Super Food Saturday Banana Quinoa Bars



My posts have been scarce since I started my job hunt.  I did not think it was going to be easy. I knew it would be a challenge for me as an older worker to find a job.

So far lots of phone interviews and half a dozen in -person interviews, but no job yet.

So I decided it was time for a little break on Friday to do some cooking.  I wanted to make a healthy treat, since I have decided I need to drop a few pounds, well about 10 lbs. to get to race weight.

These are full of healthy stuff like quinoa, bananas, oats and apple sauce. I got inspired to create this recipe from one I found at my niece Courtney's house. We were sorting her recipes and I saw one for cookies. I changed up the ingredients a bit and changed these into bars.

I will use these as healthy treats after I do my long runs. I start training for the New York marathon in  June. The time after my runs is the most risky for bad snacking since I get so hungry. I froze these so I just have to take one out of the freezer after a workout.

These also have a bit of chocolate, which is nice for when chocolate cravings hit.  Feel free to make your own changes.

Banana Quinoa Bars

1 1/4 cup quinoa cooked according to package directions
1 cup coconut
1 1/2 cups old fashioned oats
1 cup almond flour
1 cup coconut flour
3/4 cup organic coconut sugar
2 ripe bananas
3 eggs
1 teaspoon vanilla
1 teaspoon baking powder
2/3 cup white chocolate chips
2/3 cup semi-sweet chocolate chips

Topping
3/4 cup semi-sweet chocolate chips
3/4 cup chopped walnuts

Pre-heat oven to 350 F. Line the bottom of a 13 x 9 pan with parchment paper. Grease the bottom with coconut oil.

Mash the banana in the bottom of a large bowl. Add the apple sauces, eggs and vanilla.  Add the dry ingredients in another bowl. Mix the dry ingredients into the wet mixture.  Blend well. If the mixture seems dry, add enough water and mix until the consistency of chocolate cookie dough.  Press into the prepared pan. Top with the chocolate chips and nuts.

Bake for 40 to 45 minutes until brown and done in the middle.  Cut into bars. Keep leftovers in the refrigerator or freeze.

CMT or Charcot-Marie-Tooth is the most commonly inherited peripheral neuropathy. It affects over 155,000 Americans (as many as MS).  It is a disease of the nerves that control the muscles. It is slowly progressive, causing loss of normal function and or sensation in the lower legs/feet and arms/hands.

Symptoms include; muscle wasting in the lower legs and feet leading to foot drop, poor balance and gait problems Atrophy in the hands causes difficulty with manual dexterity.

Structural foot deformities such as high arches and hammer toes are common.

Poor tolerance for cool or cold temperatures and many people have chronically cold hands and feet.

Additional symptoms may include fatigue, sleep apnea, breathing difficulties and hearing loss.

Fair Friday- Honey Turmeric Facial Mask



This is another recipe I got in a daily e-mail from Dr. Axe. He is a doctor of natural medicine and a chiropractor.  He has one of the most visited health sites on the Internet.  Check out his site
https://draxe.com/  for great recipes, articles and to purchase essential oils and supplements.  He also a number of great videos. I've learned so much from him.

He is a big believe in getting rid of the toxins in our lives. That means using more natural products for our beauty routines.  Today's recipe is from his site.  This mask was easy to put together. I had everything on hand.

Wash your face and plans first.  Leave on your face for 15 to 20 minutes. Be sure to rinse off well since the turmeric can stain.

1/2 teaspoon turmeric powder
1/2 teaspoon organic apple cider vinegar
1 tablespoon organic raw honey
1/2 teaspoon yogurt
1 drop lemon essential oil or fresh lemon juice

In a small bowl mix together all of the ingredients. Be careful not to make it too thin or it will drip when applied to your face. Avoid the eye area. Let the mask stay on your face for 15 to 20 minutes. 

There was enough for one application when I made this recipe. If you have any leftovers, cover and leave in the refrigerator.  Apply two times per week for the best results.

2017 Review- It Was a Very Good Year

I know it seems a  little crazy to be doing a review of 2017 in May.  I was downsized out of my job at the end of January and sometimes I wonder when I ever found the time to work.

I have been so busy job hunting it has consumed most of my time.  But I wanted to take just a minute to highlight some of the high points of my 2017 season.

I stopped competing after a bike accident because it was just not fun anymore.  My running times had slowed dramatically, I was constantly getting injured and my feet burned when I ran.  Still I kept running in case I ever needed to ramp up to competition again.

After my CMT diagnosis that is just what I did. CMT has continued to slow me and I am not the athlete I once was. But over the last 7 years since I re-entered competition there have been many highlights.

One of the high points came a few months ago when I received the certificate pictured at the top of the blog. I was named an All American by USA triathlon. This designation is given to the top 10% of athletes.   Aquathlon is one of the lesser raced disciplines.  I may not be the fastest athlete, but by picking a lesser raced discipline, I have been able to represent Team USA twice as an age group athlete. I will do so again this July in Denmark. I ended up being ranked 8th in the country among women in my age group.

USA Triathlon has been so supportive of the para-athlete community. They are the only national sports organization that supports competition at the grass roots level. They honored me this year by choosing me as one of their ambassadors. Only 44 were selected from a pool of 3300 applicants. My job is to promote the sport of triathlon. I am doing so by being an ambassador for the Wisconsin Senior Olympics, coaching for Girls on the Run and doing talks to local groups.

Another highlight was wining my age group for the short race series of my local running club the Badgerland Striders.  I also won 2nd in my age group for the Chilly Willy Run series.  Running in these races got me out of bed and to the race on some really cold mornings. Not bad for a girl that was yelled at during grade school relay races for being so slow.

My biggest race of the season was at the National Championship in Miami for Long Course triathlon.
I raced the 1/2 iron aqua bike and 1/2 iron triathlon.
The best part of the race was seeing fellow Team CMT member and former coach Joy De Caro. She would win the national championship for the aqua bike race and I won for the long distance race. It was not a great day for me since I struggled on the run, but I qualified for Team USA in both events.  I decided not to race either of them due to the expense. Just making the team helps keep me motivated and training.  I will be racing the Aquathlon event at the World Championship and that will have to be enough until I am working again.

It has been 7 years since the first race of Team CMT in April of 2010 in Brown Deer, Wisconsin. Since that day when we had three members we have grown to 213 members in 39 states and in Australia, England, Scotland, Canada, Vietnam, Turkey, Finland, Scotland, France, Poland, Iran, Norway and Sweden. I am humbled by those that have joined in this fight to raise awareness, find treatments and a cure.  We run and compete for those that can't! We have raised thousands for CMT research and programs. We have raced at high profile races such as the Boston Marathon, Marine Corp Marathon and Bike New York.  I am so excited for 2018. I know it is going to be another great year!
