I like to try out new recipes to keep my menu fresh. This was a new recipe for me. It was really good and I will make it again. I am used to having goulash when it is more of a stew. This soup is just a thinner version. Feel free to change up the ingredients to make it your own.
Hungarian Goulash Soup
2 tablespoons
extra virgin olive oil
1.5 lbs. chuck steak or roast cut into bite-sized pieces
1 yellow onion finely chopped
1 tablespoon minced garlic
1 tablespoons all-purpose flour
1 can (14 ounces) can tomato sauce
1 (14 ounce) diced tomatoes
1 medium carrot finely chopped
1 red bell pepper finely chopped
1 tablespoon Hungarian Paprika
1 teaspoon caraway seeds
4 cups beef stock
8 ounces wide egg noodles
Sour cream to garnish.
Heat the
olive oil in a large stock pot over medium heat. Add the beef and cook over
medium heat. Sprinkle with salt and pepper. Cook until the meat is brown.
Add the onions and garlic and cook until the onions are soft. Add the flour.
Stir and cook for a minute.
Add the
tomato sauce, diced tomatoes, carrot, red pepper, stock, paprika and caraway
seeds.
Bring to a
boil. Reduce head. Cover and simmer for 40 minutes, stirring occasionally.
While the
soup is cooking, bring a large pot of water to boil. Add the noodles and cook
according to package directions. Drain
when cooking is complete. Rinse with cold water, the add a small amount of olive
oil to coat the noodles.
Taste the
soup and adjust the seasonings as needed.
Serve with noodles with a dollop of sour cream in each bowl.
