Super Food Saturday- Frozen Grapes



The heat index is in triple digits this weekend in Milwaukee. These grapes are a really great treat when it is really hot. They are really simple to get ready as well.

Red grapes contain anti-oxidants and flavonoids that are helpful in promoting heart health, weight loss, eye healthy, colon health and eye health.

They contain vitamins, C, A, K, and B6.

They are also rich in thamine, riboflavin, niacin, and folate. They contain the minerals potassium, calcium, magnesium, phosphorus and sodium.

They are a fruit meaning they contain sugar, so keep the amount you eat in line with your desired daily calorie in-take.  One cup has about 100 calories

Grapes are also contain lots of water, which is great for staying hydrated on a hot day.  These are super easy to make.  I washed a couple of bunches of grapes and removed them from the stem. Then I placed them in the freezer in a plastic bag.

This week it was 96 F and humid, so it was a perfect chance to enjoy these.  They were sweet and really refreshing. They are a great substitute for dessert after a meal.

Symptoms include; muscle wasting in the lower legs and feet leading to foot drop, poor balance and gait problems Atrophy in the hands causes difficulty with manual dexterity.

Structural foot deformities such as high arches and hammer toes are common.

Poor tolerance for cool or cold temperatures and many people have chronically cold hands and feet.

Additional symptoms may include fatigue, sleep apnea, breathing difficulties and hearing loss.

Salad Sunday- Creamy Broccoli Coleslaw Salad



This makes a really large amount of salad. I made this to serve as a main main. It would also be great to take to a gathering to serve as a side.

Creamy Broccoli Coleslaw Salad

1 (12 ounce) bag of broccoli coleslaw
1/2 red cabbage shredded
1/2 green cabbage shredded
4 carrots shredded
2 apples cored and chopped ( leave skin on)
1 cup of shredded mozzarella cheese
1/2 jicama peeled and cut into bite sized pieces
1/2 cup dried cherries

Dressing
1 jar(30 ounce) Miracle Whip
8 ounces sour cream
1 tablespoon dry ranch dressing

Combine all of the ingredients in a large salad bowl.  Combine the ingredients for the dressing. Add to the salad mixture and mix well.  Top with fresh ground pepper. Chill for 4 hours before serving.
Makes 8 main dish or 20 side dish servings.

Super Food Saturday- Raspberry Chocolate Chip Brownies


Raspberry Chocolate Brownies

1/2 cup gluten free oats
1 cup unsweetened cocoa powder
1 cup vanilla whey powder
2 eggs
1/4 cup honey
2 teaspoons chocolate extract
1 1/3 cup almond milk
2 tablespoons coconut oil, melted
1 cup frozen raspberries, thawed
1 1/2 cup milk chocolate chips
1 cup pecan pieces

Preheat the oven to 350 F. Coat a 9 inch round cake pan with coconut oil. Set aside,Place the oats in a blender and grind until they make a fine flour.
Put the oats into a mixing bowl. Add all of the ingredients except the chocolate chips and nuts. Mix well.  Add half of the chocolate chips and mix well.  Pour the mixture into the prepared pan. Top with the other half of the chocolate chips and the pecans.

Bake for 30 to 35 minutes or until a knife inserted in the center comes out clean.  Remove from pan once cooled and cut into wedges.  Serves 8

Girls on the Run-5K

My local running club the Badgerland Striders has been a long time partner of Girls on the Run (GOTR). They are an organization that works with 3rd to 5th grade girls with the goal of running a 5K.

I have wanted to volunteer with GOTR for some time. Now that I am unemployed I finally have the time. So I volunteered to be a community coach at Lincoln grade school.

That meant going through a background check and a day long training session.  I was surprised to learn that running is just a small part of the GOTR  20 lesson course.  We met twice a week.

Every week there was a different life lesson in things like gratitude, friendship, team work, positive self talk, bullying, media messages and building healthy habits.  The girls also learned dynamic stretches to start the workout and cool down stretches. Of course we spent about 30 minutes each session running. The girls would pick a goal of how many laps they would try to do on the playground course.  If they couldn't run they were encouraged to walk. Often we had activities and games to help keep them moving.

The best part of being a coach was meeting the girls. Every time I walked through the playground to get to the school, the kids would run up to meet me with smiles and hugs. They were bright, energetic and hard working. They worked wall as a team to help each other during practice.

The final part of the program was to be a 5K run at Miller Park stadium, the home of the Milwaukee Brewers.  The girls from all the programs in the city would be running along with the coaches and running buddies. Each girl is required to have a running buddy, either a family member or a coach.

We ended up with about 8 girls doing the run, along with coaches and family members.
We helped the girls pin on their numbers. Every girl had a "1" on their number and mine said "Coach".  The bag with the running numbers also had hair spray paint. We painted each other's hair purple and yellow.  That was lots of fun and added to the pre-race excitement.

It turns out that 1100 girls plus their running buddies did the event.  The race was a fun run and the goal was to finish.   There were four waves and soon our group was called to the start line.

We had hoped to stay together as a group, but four of the girls took off running like a shot. The coach and I each walked with the other girls.  The course is used for a number of running events at the stadium.  It is one loop and almost completely flat. A perfect course for a first race. We walked and the 3 miles went by really fast.  I got a chance to have a nice long talk with my athlete.

I was thrilled to see the girls that had run waiting at the finish line to cheer those of us that walked as we crossed the finish line.  I was so proud of how they all supported each other, not only during training, but on the big day as well. We all met back at our starting point for group pictures.

I hope that these girls learned some lessons that will serve them for years to come. I hope they had as much fun as I did working with them. I am not sure if I will do the fall session. It will depend on my work situation and I will be training for the New York marathon.  Working as a volunteer has certainly been the highlight of my time off from work.

Skillet Sunday- Egg Noodles



This is another comfort food recipe I got from my grandma Mary Karl. She made this for us when we would come to visit. She called it "Egg Noodles".  She is also the one that introduced me to cooking scrambled eggs with the cooked bacon mixed in.  It has just a few ingredients and makes a quick supper when I have a craving for eggs.

3 eggs, do not beat
2 tablespoons butter
1  1/2 cooked wide egg noodles.

Heat a cast iron frying pan on medium heat. Add the butter and melt. Once the butter is melted, add the noodles. Toss with a fork to coat the noodles in butter.  Crack the eggs onto the noodles, one at a time. Mix the eggs into the noodles with the fork.  Cook the mixture like you would scrambled eggs, using a metal pancake turner to scrape the mixture around the skillet.

Serves 1

Super Food Saturday- Chocolate Nut Butter Smoothie


1 1/2 cups coconut milk
1 scoop of vanilla whey protein powder
1 ripe banana
2 tablespoons coco powder
1 tablespoon coco nibs
2 tablespoons almond or sunflower butter

It is always easy to put one of these together for breakfast. Put everything in a blender. Blend on high for 20 seconds.

Serves 1

Fair Friday- Soak for Rapid Weight Loss

1 cup Epsom Salt
1 cup Organic Apple Cider Vinegar

1 T ginger powder
10 drops grapefruit essential oil

Place everything into the bath tub and fill with warm water.  Soak for 20 minutes. Be sure to rinse the tub well since the ginger can stain the tub.

Knowing My Limits-Brookfield Aquathlon

On May 23rd I participated in an Aquathlon race in Fox Brook park in Brookfield, Wisconsin.   I did a series of these races a couple of years ago. The organizer stopped doing the races because attendance was not high. I am not sure why aquathlon has not caught on because the races can be really fun.

A different race promoter decided to bring the race to Fox Brook park in Brookfield, Wisconsin. There would be a series of 5 races over the summer and early fall. I signed up for the series even though I would miss one race when I am in Denmark at the World Championship for Aquathlon.

When I got to the race, there was no record of my registration. I was feeling really tired and before I could tell the race organizer to forget about racing, he said he would let me race until we figured out later if I had paid.

I should have stuck with my plan not to race, because the swim did not go well.  It has been a colder than normal April and May in Wisconsin.  I expected the water would be cold, but was told the temperature was 69 F. In talking with one of my friends before the race, she said the lake was spring fed and when she swam there last summer found that there were often really cold spots farther out in the race.

I got on my wet suit and decided to warm up. The race would be a 1000 meter swim and three loops on the one mile path that circled the lake.  Should have been easy, since I have done these types of races for years. Still you never know what can happen on race day.

I did my warm up and the water on shore seemed really warm, but also really weedy, with a heavy layer of algae on the top all around shore. I was starting to think my long sleeve wet-suit would be too warm. I saw a couple of athletes in swim suits only.

Too late now, I lined up with everyone else for the mass start. Looked to be about 150 athletes.  I know these kinds of events held during the middle of the week, bring out really hard core athletes.

I expected to finish at or near last of all the swimmers.   When the race started most of the swimmers were soon well ahead of me. Still I was in a group of about half a dozen athletes and keeping up OK.

But soon the water got really cold and I started having trouble catching my breath. I have been swimming and working out on a regular basis, so I am not out of shape.  When I can't catch my breath it throws me off mentally as well.

I have pushed through this often in races, but twice now this shortness of breath has developed into a flow blown asthma attack. It happened in Chicago in a Lake Michigan swim. It was the first time in my life I actually wheezed. It happened a couple of years ago on Pewaukee Lake and there was no kayak anywhere near me. That really scared me because no one knew that I was in trouble. That time I was worried I would not make it to shore.

On this night I rest on the kayak and once I caught my breath gave it another go.  I knew soon the pack would be through for the second lap. When I continued to have trouble I grabbed onto the kayak again. When she offered me a ride to shore I took it. I had made it about 2/3 of the way through the first lap.

The official on shore took my timing chip, told me I was still welcome to do the run portion.  The first male racer arrived in transition just after me, then another women. When we got on the run course together she shared she had also dropped out after one lap due to the cold water.

As I ran the three lap run course at a easy pace, I continued to be short of breath, so it was probably a good thing I dropped out. I saw one of my friends in transition at the finish. She is a slower runner than I am, so I know she dropped out as well.

I did not feel good about taking that kayak ride and dropping out. It is a little embarrassing. I always seem to struggle in my first swim of the season. I have another race this weekend with a 1500 meter swim and now I don't feel confident about this race.

Failing races happens, it is only the second race I have ever dropped out of. I just have to chalk it up to experience. No race is worth getting a full blown asthma attack. I also  have a triathlon toward the end of June. This gives me a couple of chances to get some race practice before I leave for Denmark.

We all have limits, the important is knowing when to push against them and when to come back and fight another day.

Slow Cooker Sunday- Pork Roast in White Wine Sauce


Pork Roast in White Wine Sauce

I made this recipe during a week when I was doing some closet painting and organizing.  That left no time for cooking so this recipe was perfect.  I put everything into the crock pot and it cooked while I worked.

I served this with Amaranth which is an ancient grain.  I put 1 cup of amaranth in a sauce pan wit3 cups of beef broth and some spices. The amaranth has a very earthy flavor, which I was not in love with. Try it yourself and see what you think.
2 cups dry white wine
2 tablespoons stone ground mustard
2 tablespoons honey
1 tablespoon lemon juice
1 1/2 lb pork roast
salt and pepper
8 ounces of button mushrooms
2 tablespoons butter
1/4 of a large white onion chopped
2 tablespoons arrow root mixed in 2 tablespoons of water

Mix the wine, mustard, honey and lemon juice. Spray a crock pot with coconut oil. Add the wine mixture. Put the pork roast on top of the wine mixture.  Cook on low for 6 hours.

When the roast is almost finished, melt the butter in a skillet.  Add the mushrooms and onions. Cook until the mushrooms are soft.  Set aside.

Remove the pork roast to a platter. Pour the wine sauce into a saucepan.  Add the arrowroot mixture and cook over medium heat until the sauce thickens. Add the mushroom mixture.  Pour over the roast.

Super Food Saturday- Cookie Dough Snack Bites



I am going to start training for the NY marathon at the beginning of June. It is a little sad to think that in 20 weeks from the start of the program, it will be November. The summers go by so fast.

When training for a marathon I have to pay extra attention to my nutrition. It is really important to manager nutrition, before during and after the run.  I have started making and freezing some healthy snacks to eat when I am done doing some of my longer workouts.

These snacks hit all the right nutritional button, they are low in sugar and have a good mix of carbs and protein.  I already had one after my long run this week.  It tasted wonderful and was just the right healthy reward.

I am also really determined to get down to racing weight. My weight has crept up and my race times have gotten longer. I am still competitive but my 5 K time is slower by 2 minutes over just a year ago.

One of the keys is being much more disciplined in my diet.  I read a book on sports nutrition recently.  The author said ideal weight for a woman long distance triathlete was 100 lbs for the first five feet and then five lbs for every inch.   There is leeway to plus or minus 10 percent. So according to that I was 10 to 20 lbs over my ideal racing weight.  With being off of work, I had been eating too much sugar, because I have all kinds of treats in my pantry. I've already dropped 4 lbs in the first two weeks.  Healthy treats like this will help.

Cookie Dough Snack Balls
1 1/2 shredded coconut
1/2 cup sunflower butter
1 scoop vanilla whey protein powder
1 teaspoon chocolate extract
2/3 cup mini semi-sweet chocolate chips.

Line a baking sheet with waxed paper. Combine all of the ingredients except the chocolate chips in a large bowl. Mix well and then fold in the chocolate chips.  Use a teaspoon to scoop out about a 1 inch ball from the bowl. Place onto the wax paper. Place in the freezer for 15 minutes until set. Remove and store in an air tight container in the freezer,
