I am going to be starting a Keto diet in a few weeks. I pre-ordered the new Dr. Axe Keto diet book.
I was chosen as one of his street team to try the book and write a review. I have been watching the videos on going Keto that are part of the Facebook group.
So I have started to convert my diet over to be more Keto. I am hoping this makes for an easier transition. I am not going to eat any processed sugar this week and no processed foods.
I put this soup together from what I got in my Imperfect Produce box or got at my local Organic supermarket, Fresh Thyme. It is a Thai style soup that I literally threw together today.
1 box box organic chicken broth (4 cups)
1/2 of an uncooked chicken
4 ounces of sliced white mushrooms
1/4 cup diced white onion
2 stalks celery chopped
1 carrot finely chopped
1/2 of a large sweet potato finely chopped.
1 cup fresh green beans cut in bite sized pieces
1 can coconut milk
1 tablespoon Thai red curry paste
1 teaspoon dried red chili peppers
1 teaspoon of Indian curry powder
1 tablespoon fish sauce
2 ounces of bean thread noodles.
1 bunch of cilantro chopped.
Put the broth and chicken into a soup pot. Heat on medium until the mixture comes to a boil. Turn down and simmer for 40 minutes. Remove the chicken to a plate. Add the sweet potato, mushrooms and onions to the still simmering broth. Remove the chicken from the bones and shred. Discard the bones and return the chicken to the broth mixture. Cook until the potatoes are cooked. Add the celery, carrot, coconut milk, curry paste, curry powder,fish sauce and chili peppers. Allow the soup to simmer. Taste and adjust the taste to suit. Add more curry paste and peppers if a spicier soup is desired.
Add the noodles to a bowl. Break apart a bit so their are easier to eat once added to the soup.
Bring about 2 quarts of water to a boil. Pour over the noodles and let stand for 5 minutes. Drain off the water and add the noodles to the soup mixture.
Ladle soup into bowls and top with chopped cilantro
Serves 6

age group at the Winter Triathlon National Championship, earning a spot on Team
USA
for the World Championship.
She
travels around the country raising awareness of CMT.
She is

CMT or
Charcot-Marie-Tooth is the most commonly inherited peripheral neuropathy. It
affects over 155,000 Americans (as many as MS). It is a disease of the
nerves that control the muscles. It is slowly progressive, causing loss of
normal function and or sensation in the lower legs/feet and arms/hands.
Symptoms
include; muscle wasting in the lower legs and feet leading to foot drop, poor
balance and gait problems Atrophy in the hands causes difficulty with manual
dexterity.
Structural
foot deformities such as high arches and hammer toes are common.
Poor
tolerance for cool or cold temperatures and many people have chronically cold
hands and feet.
Additional
symptoms may include fatigue, sleep apnea, breathing difficulties and hearing
loss.
