Tuscan Chicken Soup
Today's recipe has a bit of Italian influence. It was easy to make because I did the broth in a slow cooker. Once the broth was finished, this soup went together pretty quickly.
6 chicken drumsticks and 4 chicken thighs
5 cups organic chicken bone broth
1 tablespoon Better Than Broth Chicken Flavoring
1 small onion
2 small carrots chopped
1 clove garlic minces
1 can navy beans rinsed
6 sun dried tomatoes sliced into ribbons
1 tablespoon dried oregano
Put chicken pieces into a slow cooker. Add the chicken broth and then add enough water to cover the chicken. Cook on low for 12 hours. Remove the chicken. Cool the broth in the refrigerator overnight. Skim off any fat that forms on the top.
Take 6 cups of the broth and add to a stock pot. Remove the chicken from three of the drumsticks and add to the stock pot. Save the rest of the chicken for other recipes. Freeze the rest of the chicken broth for another use.
Add the onion, garlic,flavoring, tomatoes and carrots to the pot. Simmer for about 10 minutes. Add beans and oregano. Cook for 5 minutes and serve.

Chris is

CMT affected athlete.

CMT or
Charcot-Marie-Tooth is the most commonly inherited peripheral neuropathy. It
affects over 155,000 Americans (as many as MS). It is a disease of the
nerves that control the muscles. It is slowly progressive, causing loss of
normal function and or sensation in the lower legs/feet and arms/hands.
Symptoms
include; muscle wasting in the lower legs and feet leading to foot drop, poor
balance and gait problems Atrophy in the hands causes difficulty with manual
dexterity.
Structural
foot deformities such as high arches and hammer toes are common.
Poor
tolerance for cool or cold temperatures and many people have chronically cold
hands and feet.
Additional
symptoms may include fatigue, sleep apnea, breathing difficulties and hearing
loss.
