It is a new year which a perfect time for me to re-commit to healthy eating. I have a goal to get back to my racing weight this winter. One of the strategies I have is to make sure I have healthy snacks.
My will power breaks down when I am hungry, so I need to have healthy snacks on hand. I got this in one of the daily emails I get from the Dr. Axe site.
I had all the ingredients on hand so it was easy to put together. It is a nice mix of salty and sweet. It may be just the thing I need to reduce my sugar intake which is also one of my goals this year.
I think almonds would also be great for this recipe and I am going to try that next time.
Salty Lime Roasted Cashews
2 cups raw cashews
1 tablespoon maple syrup
1 teaspoon sea salt
2 tablespoons lime juice
- Preheat oven to 375 degrees F.
- Mix all ingredients in a bowl. Be sure all the nuts are coated. Turn the bowl on it's side if needed, since the liquids can pool at the bottom of the bowl.
- Bake for 20 to 25 minutes, stirring every 5 to 10 minutes.
- Allow to cool before eating. Store in a covered bowl.

Chris is

for the World Championship.
She
travels around the country raising awareness of CMT.
She is
the author of the book, “Running for My Life” that details her experience as a
CMT affected athlete.

CMT or
Charcot-Marie-Tooth is the most commonly inherited peripheral neuropathy. It
affects over 155,000 Americans (as many as MS). It is a disease of the
nerves that control the muscles. It is slowly progressive, causing loss of normal
function and or sensation in the lower legs/feet and arms/hands.
Symptoms
include; muscle wasting in the lower legs and feet leading to foot drop, poor
balance and gait problems Atrophy in the hands causes difficulty with manual
dexterity.
Structural
foot deformities such as high arches and hammer toes are common.
Poor
tolerance for cool or cold temperatures and many people have chronically cold
hands and feet.
Additional
symptoms may include fatigue, sleep apnea, breathing difficulties and hearing loss.
