Soup Sunday- Homemade Ramen Soup




Ramen is the staple of millions of college students and young professionals.  It is cheap, easy to make and a tasty comfort food. The only problem is that it is not healthy. The noodles are fried and the flavor packet is high in sodium and artificial ingredients.  I've put together a home made version that is almost as simple and fast as the instant variety. I would always doctored up the instant Ramen with the same things in this recipe.  I use ingredients that I have on hand, so feel free to make your own adjustments to suit your taste.

4 ounces Chinese style wheat noodles
4 cups chicken bone broth
6 medium raw shrimp, peeled
1 carrot shredded
1/4 yellow onion chopped
1 stalk celery chopped
2 eggs ( do not beat)
2 teaspoon Five Spice Powder
1 teaspoon minced garlic

Put the bone broth in a medium sauce pan.  Bring to a boil, add the noodles and turn the heat to simmer.  Continue to simmer until the noodles are cooked.  Add the shrimp and simmer until the shrimp turn pink. Add the onions, celery, carrots, Five Spice Powder and garlic. Turn up the heat again to bring the soup to a hard boil.  Add the eggs one at a time. Give the eggs a bit of a stir with a fork, just to break them up a bit.  Continue to boil the soup until the eggs are cooked. This will take about 2 minutes. You should see the yolk of the egg has turned solid.

In 2017 she placed 2nd in her age group at the Winter Triathlon National Championship, earning a spot on Team USA for the World Championship.

She travels around the country raising awareness of CMT.

CMT or Charcot-Marie-Tooth is the most commonly inherited peripheral neuropathy. It affects over 155,000 Americans (as many as MS).  It is a disease of the nerves that control the muscles. It is slowly progressive, causing loss of normal function and or sensation in the lower legs/feet and arms/hands.

Symptoms include; muscle wasting in the lower legs and feet leading to foot drop, poor balance and gait problems Atrophy in the hands causes difficulty with manual dexterity.

Structural foot deformities such as high arches and hammer toes are common.

Poor tolerance for cool or cold temperatures and many people have chronically cold hands and feet.

Additional symptoms may include fatigue, sleep apnea, breathing difficulties and hearing loss.
